Pig Out Time

Tomorrow we have another pig out at work and I offered to bring my now famous Chocolate Cheesecake.  This is my first real from scratch cake that I have ever made so it is very special to me.  Not only that, but it proved to me and my husband that I actually do have a little chef/baker in me.  

Here is the recipe:

Ingredients: 3 packages (8oz) cream cheese softened, 1 1/4  cups sugar, 1 8oz container of sour cream, 2 teaspoons vanilla extract, 1/2 cup HERSHEY’S Cocoa, 2 TBSP all purpose sugar, 3 eggs, and Hershey Chocolate Syrup

Preheat oven to 450.

For the crust:Combine 1 cup Oreo cookie crumbles and 1/2 stick of butter and press onto the bottom of a 9 inch spring form pan.

Next beat the softened cream cheese and sugar with the mixer until blended. Add sour cream and vanilla; beat until blended.  Beat in cocoa and flour.  Add eggs, one at a time; beat until blended.  Then pour into the crust.

Next Bake 10 minutes.  Reduce oven temp to 250 degrees  and continue baking for 40 minutes.  Remove for oven to cooling rack.  Loosen cake from side of pan. Cool completely before removing sides of pan.  Drizzle the chocolate syrup over top and refrigerate for 6 hours. 

I am glad when we got married, we made sure to add an Eclectrics® Mixer to our registry.  The first time I made it, I tried using a hand held mixer, which when trying to beat the cream cheese, burned out.  Our wedding present electric mixer, does a better job but it only has a few settings.  What I would really like is a Hamilton Beach® Stand Mixer.  These are really nice mixers that come in a variety of colors and numerous speeds, almost 12.  It is hands free which is really needed when trying to make dessert along with supper.  The bowl even locks into place on the mixer and has a handle for easy pouring.  I hate having to use a spatula to get all the excess out of the bowl while to trying to do a balancing act of getting the mixture into the pan.  Not only that, it is quieter than my mixer.  I think the Hamilton Beach® Mixer may be the best mixer for me on the market right now.
